Marianne’s Roasted Chicken Recipe
Ingredients
- Scratch Made Farms Whole Chicken
- 3-4 Celery Stalks, Chopped
- 3 Whole Carrots, Chopped
- 1 Yellow Onion, Sliced
- 3 Medium Potatoes, Chopped Skin On
- Celery Salt
- Pepper
Directions
- Preheat the oven to 350 degrees.
- Sprinkle a liberal amount of celery salt inside the chicken. Add about half as much pepper.
- Add chopped carrots, onion, and potatoes into a large bowl. Toss with celery salt and pepper.
- Stuff the chicken cavity with the seasoned vegetables.
- Place the chicken in an oven-safe pot. Season the outside of the chicken with celery salt and pepper.
- Fill the pot with an inch of water.
- Pour the remaining vegetables around the chicken.
- Place the chicken in the oven and cook with the lid on. (4-5 pound chicken ~ 1.5 hours)
- Once done, remove the chicken from the oven. Allow it to sit without the lid for 15 minutes then serve!
Additional Notes: To ensure the chicken is fully cooked, pull on a drumstick. If it moves easily it is fully cooked. Alternatively, you can cut into the breast meat and check for doneness.
